Ingredients
1 Medium Sweet Potato
2 Carrots
1 Cup Peas
1⁄2 Can Light Tuna in Water 1 TBLS Olive Oil
1 Slice Whole Wheat Bread
Instructions
- Wash vegetables
- Cut the potato into 4 chunks
- Boil the potato and carrot approximately 20 minutes
- Add the peas to the boiling water and boil until they are soft
- Drain the water from the vegetables
- Chop the potato and carrot into smaller cubes
- Mix the potato, carrot, and peas.
- Drain the water from the tuna and mix in to the vegetable mix.
- Mix in Olive Oil
- Serve with whole wheat bread or on a bed of mixed greens.
