Mediterranean Tuna Salad

Ingredients

1 Medium Sweet Potato
2 Carrots
1 Cup Peas
1⁄2 Can Light Tuna in Water 1 TBLS Olive Oil
1 Slice Whole Wheat Bread

Instructions

  1. Wash vegetables
  2. Cut the potato into 4 chunks
  3. Boil the potato and carrot approximately 20 minutes
  4. Add the peas to the boiling water and boil until they are soft
  5. Drain the water from the vegetables
  6. Chop the potato and carrot into smaller cubes
  7. Mix the potato, carrot, and peas.
  8. Drain the water from the tuna and mix in to the vegetable mix.
  9. Mix in Olive Oil
  10. Serve with whole wheat bread or on a bed of mixed greens.
