Avocado Lime Salmon

Avocado Lime Salmon

Ingredients:

Salmon Fillets – 2 6 oz.

Avocado – 1

Lime – Half 

Cauliflower – 1 Cup

Diced Red Onion – 2 tbsp

Directions

Pulse the cauliflower in a food processor until it looks like rice.

Place cauliflower in a lightly oiled pan and cook covered for 8 minutes. Stir occasionally to prevent sticking.

Blend the avocado, lime juice, and red onion until it is smooth and creamy.

Place salmon skin side down in a heated and oiled pan. Cook this way for 4-5 minutes.

While the salmon is cooking season it with salt and pepper.                                                          

Flip the salmon and continue to cook for an additional 4-5 minutes.                                                           

Serve over a bed of cauliflower (half a cup) and place a dollop of the avocado lime sauce on top.
