Sheet Pan Roasted Vegetables

Ingredients:

  • Cauliflower – 1/4 Cup
  • Broccoli – 1/4 Cup
  • Sweet Potatoes – 1/4 Cup
  • Red Onion – 1/4 Cup
  • Olive Oil – 1/2 TBSP
  • Dijon Mustard – 2 TBSP

Directions:

  • Preheat oven to 450F
  • Wash and chop all vegetables
  • Cut off the ends of the sprouts and slice in half
  • Place all ingredients in a bowl and mix
  • Place all veggies on sheet pan and bake for 20 minutes. Stir gently and bake another 10-15 minutes.
  • Serve immediately.
