Buffalo Chicken Lettuce Wraps

Ingredients:

  • Boneless Skinless Chicken Breast – 3 large / ½” cubes
  • Butter Lettuce Cups – 20
  • Cherry Tomatoes – ¾ cup / halved
  • Avocado – 1 / diced
  • Green Onions – ¼ cup / sliced
  • Ranch Dressing – ½ cup
  • Hot Sauce – ¾ cup
  • Buffalo Sauce – ½ cup

Instructions:

  • Cut chicken into ½ inch cubes and place in a bowl
  • Pour the ¾ cup of hot sauce over chicken and stir, place in refrigerator for at least 30 minutes
  • Place chilled chicken in a grill basket or on kabob sticks
  • Cook on preheated grill at 400 degrees Fahrenheit for 8-10 minutes or until chicken reaches 165 degrees Fahrenheit for 15 seconds
  • Remove from grill and toss in ¼ cup buffalo sauce
  • Place chicken (approx.. 3 cubes) into lettuce cups and cover with diced tomatoes, avocado, green onions, and ranch dressing.
