Ingredients:
- Low Fat Plan Yogurt – 1 Cup
- Low Fat Buttermilk – ½ Cup
- Cucumbers (large) – 4 to equal 5 ½ cups chopped (peeled and seeded)
- Avocados – 2 (hulled / removed from skin)
- Green Onions – ¾ Cup (chopped finely)
- Parsley – 2 TBSP
- Lemon Juice – 3 TBSP
Instructions:
- Chop / dice all vegetables as instructed
- Place cucumbers, avocado, and green onions in a food processor and process until a smooth texture is achieved.
- Add parsley, yogurt, buttermilk, and lemon juice and process again until thoroughly combined.
- Salt and pepper to taste
- Chill in refrigerator at least 30 minutes
