Cucumber Avocado Soup (Cold)

Ingredients:

  • Low Fat Plan Yogurt – 1 Cup
  • Low Fat Buttermilk – ½ Cup
  • Cucumbers (large) – 4 to equal 5 ½ cups chopped (peeled and seeded)
  • Avocados – 2 (hulled / removed from skin)
  • Green Onions – ¾ Cup (chopped finely)
  • Parsley – 2 TBSP
  • Lemon Juice – 3 TBSP

Instructions:

  • Chop / dice all vegetables as instructed
  • Place cucumbers, avocado, and green onions in a food processor and process until a smooth texture is achieved.
  • Add parsley, yogurt, buttermilk, and lemon juice and process again until thoroughly combined.
  • Salt and pepper to taste
  • Chill in refrigerator at least 30 minutes
